In the heat of summer, we get Spanish variety padron peppers from a local, organic farm.
These peppers are usually sweet and mild. But the lovely secret is one of every 10 or so has a nice, spicy kick. We hand smoke the peppers and pickle them with a little locally grown piment d'espelette.
These pickles have a bit of a spicy taste and a subtle smoky flavor in the background.
We love them straight out of the jar! They are a perfect relish for your holiday meal or make a perfect treat with a cheese tray. And you can add a hint of pepper to a sweet-smokey cocktail.
